The F word...

So I go outside to my car this morning and the F word is all over it...yep you guessed it, Frost. Like I said, Fall is for sure my favorite time of year but as soon as I see frost, I get the pit in the stomach of what's to come...he who must not be named. (for those of you non Harry Potter fans... Winter).
Winter turns me into instant hibernation mode and instead of having a fresh piece of fruit I want something warm and baked.
Here is an easy recipe that you can cook up for dessert for friends and family. I've made it for my friends before at a small dinner party and it was a hit.


Mini Fudgey Chocolate Cakes

These are meant to be served fresh out of the oven so that the inside of the cake is still warm and runny! It serves 4, so feel free to double it!

Ingredients
  • 4 ounces semisweet baking chocolate
  • 4 tablespoons butter
  • 1 large egg
  • 1/3 cup sugar
  • Pinch of salt
  • 1 tablespoon flour
Preparation
 
Preheat the oven to 350°F.
Melt the chocolate and butter together in a small saucepan.
Whisk the egg, sugar, and salt together until yellow and light. Fold in the melted chocolate batter. Mix in the flour until fully incorporated.
Lightly butter the cupcake tins. Pour the batter into the tins and bake for about about 12 minutes, just until the tops crack.
Remove the cakes from the oven. Using oven mitts, place aluminum foil on the top of the cupcake tins and seal on all sides. Turn over onto a flat surface and bang the bottom of the cupcake tins. Remove the cupcake tins to leave the cakes upside down on the aluminum foil. Carefully turn right side up and place on the plate.

Add fresh fruit and powdered sugar for presentation and you're ready to serve!
