A Sunny Friday!
Finally the sunshine is back! Feels great doesn't it? I find not only does it make me feel happy, but I feel like I instantly have more energy! Imagine those who live with sunshine all the time?... the life!

Spring showers...
Well, woke up to snow & freezing rain? Was this punishment for last week's amazing weather? I hope by next week it'll start warming up again, I miss the sunshine & wearing flats!
Our next holiday is Easter! Check out this cute Easter cupcake I did awhile back!

Today, We Remember..
A year ago today we lost someone really special. I always knew he was special to me, because some of my favorite childhood memories involved him, but it really hit me just how special he was, when I went to his celebration of life last year at his restaurant in Halifax. It was packed from teenagers to grandparents, all of which had a story to tell about my uncle. I cannot even describe to you the emotions I felt walking through his restaurant, talking to complete strangers who worked for him, were friends with him, or even those who only met him a handful of times. To have someone come up to you and tell you your uncle was a real legend in this town, it really made me realize that how I felt about him, the 300+ people in the bar felt the same, and that feeling is quite indescribable. It really was a celebration of his life, and he wouldn't have wanted it any other way.
My uncle David lived in Halifax for many years before his death, and therefore like anybody who lives long distance, you tend to lose touch. When someone passes, you often think of the things you wish you did, or said more, and I have to say I had a really hard time with his death because I wish I had known him better as an adult. Over the years when I'd seen him on holidays or random check ins (he was notorious for that) I realized that a lot of my personal traits had come from him. So instead of beating myself up for not being as close to him as I should have, I take with me that he'll always be a part of me.

Mel's Meals - Quinoa Salmon Salad
MEL!! I’ve been so busy I’ve been putting your meals off for ages. Unfortunately today’s meal isn’t even well documented, but I figure since it’s SUPER easy to make, you’ll get the idea by the finished product! This meal is extremely healthy, and tastes delicious! You can switch up the Salmon for trout, Halibut, Sole or whatever floats your boat! So here’s today’s meal; Quinoa Salmon Salad. The beauty is this makes enough salad to last a couple of days. You can either eat this fresh out of the oven, or cold the next day for lunch.
Quinoa Salmon Salad
1 cup of Quinoa
1 Cucumber, quartered
3 Green Onion, sliced
2 Grape Vine Tomatoes, diced
1 Medium sized Filet of Salmon
1 fresh Lemon
Olive oil
Preheat oven 400
Step 1 - Cook the Quinoa, and refrigerate immediately to cool down.
Step 2 - Prepare fish in baking dish with salt, pepper, olive oil and half the lemon cut in thin slices. Bake for 20-25 minutes (or until its flaky).
Step 3 - While the fish is baking, prepare the cucumber, tomatoes & green onions, add to the Quinoa with a sprinkle of olive oil, salt & pepper. Refrigerate until fish is cooked.
Step 4 - Place the filet of Salmon on the bed of Quinoa and drizzle a touch of olive oil & fresh lemon juice.

Hello!
Hope you all enjoyed this fantastic week of ridiculously warm weather! We broke some crazy records here in the Montreal area, although it scares me a little that global warming is clearly happening, but I'm definitely not complaining! As the weekend approaches, we're going to be going back into the lower temps, but I will mention that they're still above average, so really we're pretty damn lucky! Bye Bye Snow, Hello green grass!

"I Believe in Pink" - Audrey Hepburn
A high of 26 today in Montreal! Wow, I mean really, it's March 21st people! This is totally crazy, but I'm definitely NOT complaining, loveeee the heat & sunshine!!
